Hotel Duval is proud to welcome Bobby Cleek to our team! Cleek joins us as the Level 8 Lounge Executive Chef. In his new role, Cleek is responsible for designing and executing all menu items for Level 8. His first task in this position was the complete overhaul of the Level 8 menu. He has now devised a new, expanded tapas menu, which was officially launched on September 15, 2014.
“We are thrilled to have someone with Bobby’s culinary knowledge and exceptionally creative style. He will be instrumental in turning Level 8 Lounge into not only the top cocktail spot, but also a top dining venue. Our Level 8 patrons ask all the time for more food options, and now we are delivering it to them! This new menu is not only unique, but is also based on locally-sourced ingredients so every item is extremely fresh,” commented Stephen Whitson, Food & Beverage Director at Hotel Duval.
Cleek has over 10 years of professional cooking and kitchen management experience. He has worked at a few of Tallahassee’s most popular dining spots such as Sidecar Gastrobar, Sage, Midtown Filling Station, and Jasmine, just to name a few.
“I’m thrilled for the opportunity to be the new chef at Level 8 and bring my own style of cooking to the table. The dishes are very southern, Asian and Spanish influenced, using as many seasonal and local ingredients as possible, with my own artistic spin. The menu is definitely built to promote the social side of eating. Many of the menu items are boards and small plates meant for getting hands on and sharing with friends.
